Cristian Pontiggia, executive chef of the iconic restaurant El Nido in Tesuque, will demonstrate
Italian food & wine cooking techniques and pairings with wines from Banfi Estate. Located in Tesuque on Bishops Lodge Road, El Nido was a fixture for roughly 80 years as a pre-opera dinner spot and a celebrity hangout. Closed in 2010, El Nido was dramatically remodeled with a wood fired grill and reopened last fall to great fanfare.

Join SFWF Honorée of the year, Violet Grgich, and discover this iconic winery’s fascinating history when she leads this vertical tasting to celebrate Grgich Hills Estate’s 40th anniversary this year. This limited-production tasting focuses on the wines most associated with Miljenko “Mike” Grgich’s legendary career, crafted from some of the oldest vines in the Grgich estate vineyards.

Violet will showcase the Old Wente clone Chardonnay planted more than 20 years ago, obtained from famed grower Larry Hyde and planted in Grgich Hills Estate Carneros Vineyard. The Napa Valley is famed for Cabernet Sauvignon and this tasting allows you explore the differences between an aged wine from our Yountville and Rutherford vineyards, 100% Cabernet Sauvignon from Grgich's Rutherford Vineyard and the Yountville Old Vine Cabernet Sauvignon grown on vines more than a half century old, planted in 1959 to the Inglenook clone from what is now Francis Ford Coppola’s Inglenook winery, on St. George rootstock in Yountville.

Vintages will span from the first-ever 2000 Esprit de Beaucastel to the 2003, 2006, 2007, 2010, 2014 and the newly-bottled 2015. An iconic Paso Robles mouvedre-based wine grafted from Chateau de Beaucastel vines in Chateaunuef du Pape, discover how Esprit de Beaucastel rewards aging and explore the wine's development over time. The seminar will start with 2015 Tablas Creek Esprit de Tablas Blanc. Paso Robles expert, Master Sommelier Joe Spellman, joins the panel.

Join Fernando Olea, Chef/Owner of Sazon in Santa Fe, for a traditional Mole cooking demonstration. Born in Mexico City, Chef Olea has been mastering techniques of traditional Mexican moles since an early age. He has been enthralling diners in Santa Fe since 1991 with his unique interpretation of contemporary and traditional Mexican dishes, including his signature moles. Nothing evokes the mystery of Mexican cuisine more than mole, a regional dish from the heart of the country. The origin of Mexican mole is mysterious. Some say it was an Aztec delicacy served to the Spanish conquistadors. Others say 16th century Hispanic nuns created it. We’re not sure of the origin, nor can the original recipe be defined! In Old Mexico each cook has their unique mole recipe often handed down generation by generation. Mole is a sauce of complex flavors that usually includes toasted and ground spices, seeds, nuts, chocolate and chile. Many mole recipes contain more than thirty ingredients and some recipes have five varieties of chile alone. Moles can be defined by their color such as rojo, verde, and negro; the town they are from such as Puebla, Oaxaca, Michoacan; and social class, such as pobres and ricos. Chef Olea is delighted to share his moles that include his “New Mexican Mole” that he created to commemorate Santa Fe’s 400 year anniversary in 2009.
